Harvest on Hudson’s menu is based on the traditional cuisines of the Mediterranean, with influences from Italy, France, and Spain, as well as Greece, Turkey and Portugal.
Chef Sal Sprufero incorporates the freshest ingredients from the Mediterranean, the Hudson Valley and our own herb and vegetable garden. Just picked organic heirloom tomatoes, peppers, eggplants, zucchini, basil, parsley and more often find their way into his gourmet dishes.
